Hello guys ! Today, because of the Italian I am, I tought I’d share a pasta recipe. This has been my obsession lately, I hope you will like it too !
- Tomato puree
- Sundried tomatoes
- Cream cheese
- Olive oil
- Sesame seeds (optional)
This recipe is really simple to prepare ! I usually eyeball the ingredients.
STEP 1: Take a pot large enough to accomodate all the pasta you want to cook, and fill it with water until 3/4 of the volume. Put it on the stove and bring it to a boil.
STEP 2: Dice the onions in small pieces (soffritto style), and cut the sundried tomatoes in small pieces.
STEP 3: Take a saucepan and put it on a medium heat with some olive oil, then put the onions in, let them get golden.
STEP 4: Add the sundried tomatoes and the tomato puree to the onions, and mix with a wooden spoon (or whatever spoon). Then let it simmer to reduce the sauce and mix the flavours together.
STEP 5: When the water is boiling you can add some salt and then the pasta. Cook it for how many minutes it says on the package.
STEP 6: When the sauce is reduced, add the cream cheese and mix well, let it simmer for a couple more minutes .. and done !
STEP 7: When you serve it you can top it with sesame seeds, I love it, but of course it’s completely optional !
TIP : Let the sauce rest off the fire for a couple of minutes before serving it with the pasta, in my opinion doing so develops a better flavour !
